And guess what? It’s also very quick and straightforward to make!
…Well, once you’ve remembered to soak the nuts a little in advance.

How to make this Vegan Tzatziki Sauce
Ingredients:
100 g Cashews Nuts (soaked overnight or at least for 4 hours before blending)
1 Lemon (Zest & Juice)
1/4 Cucumber
1 Clove Garlic
10ish Leaves Fresh Mint
Salt & Pepper to Taste
Method:
1. Soak cashews ideally overnight (or at least for 4 hours).
2. Grate the cucumber, remove the seeds and drain the excess water with a clean cloth.
3. Add all the ingredients in a blender and blend until smooth and gorgeous!
*Please note: a bit of extra water (of some plant based milk for extra taste) may be required in order to achieve the perfect smoothness.
4. Do not forget to taste it to adjust the saltiness and the amount of pepper and….
5. SERVE!
