Vegetable Oil

Soy Milk

British Cucumber

Mint Leaves

Garlic Clove

Instructions
Wash the cucumber and grate it.
Place one sheet of cheese cloth over a sieve and pour the grated cucumber.
Squeeze all the moisture off the cucumber and set aside.
In a tall blender glass measure all the remaining ingredients and blend for a few seconds until smooth and creamy.
Add the cucumber, stir well and use the vegan tzatziki sauce straight away.
Notes
This sauce will last in the fridge for a few days (up to one week).
