First, preheat your oven to 200°C - 390°F (or if you're using an air fryer, preheat it according to the manufacturer's instructions).
While the oven/air fryer (recommended) is heating up, prepare the cauliflower florets by cutting them into bite-sized pieces and wash them carefully under running water.
Toss the cauliflower florets with vegetable oil and spread them on a tray/air fryer basket forming only one layer. Bake for 25 minutes in the over or 15 in the air fryer.
Meanwhile thinly slice the red onion.
After the first baking time flip the cauliflower florets and spread the red onion slices on top of them. Bake for another 10-15 minutes in the oven and 5 in the air fryer (or until cauliflower turns fork tender and onions are soft/caramelized).
For the homemade Yakitori Sauce: mix the sake, mirin, soy sauce and sugar together until the sugar is fully dissolved.
Mix the Yakitori sauce, vegan oyster sauce, siracha, vegan fish sauce, dried chili flakes, syrup of your choice and sweet chilli sauce in a large bowl.
Transfer the sauce to a pan and heat it up until it starts bubbling.
Combine the roasted/air fried cauliflower bites and onion slices to the pan and toss into the sauce until generously coated.
Serve the vegan bang bang cauliflower bites garnished with ginger sticks, fresh coriander leaves and red hot chilli pepper slices.
