Vegan Scotch Egg

Instructions

  • Make 1 batch of Hard Boiled Egg Shell (Tofu Based) and around ¼ of the Vegan Yolk (links to the recipes are in the notes). You can make these element in advance, up to 2 days prior.
  • Using a fruit baller tool, remove a half sphere from of each egg white half, right where the yolk would be, then fill each half with the vegan yolk mixture.
  • In a one liter bowl combine the vegan mince with the stuffing, the spices & herbs, then divide the mixture into four equal balls.
  • Squash each of the balls between a piece of cling film until it’s as flat as possible, then use the cling film to help roll the meat-free mixture around the reconstructed vegan egg to completely encase them. Repeat with the remaining mix and "eggs".
  • Prepare two bowls: one with your choice of plant milk, and another with the breadcrumbs, then dip every "egg" first in the milk, then coat well in breadcrumbs.
  • Arrange the breaded scotch eggs in a well oiled air fryer basket, spray the top of each egg with extra vegetable oil and cook for 10-15 minutes at 190-200°C, or until golden.
