Make 1 batch of Hard Boiled Egg Shell (Tofu Based) and around ¼ of the Vegan Yolk (links to the recipes are in the notes). You can make these element in advance, up to 2 days prior.
Using a fruit baller tool, remove a half sphere from of each egg white half, right where the yolk would be, then fill each half with the vegan yolk mixture.
In a one liter bowl combine the vegan mince with the stuffing, the spices & herbs, then divide the mixture into four equal balls.
Squash each of the balls between a piece of cling film until it’s as flat as possible, then use the cling film to help roll the meat-free mixture around the reconstructed vegan egg to completely encase them. Repeat with the remaining mix and "eggs".
Prepare two bowls: one with your choice of plant milk, and another with the breadcrumbs, then dip every "egg" first in the milk, then coat well in breadcrumbs.
Arrange the breaded scotch eggs in a well oiled air fryer basket, spray the top of each egg with extra vegetable oil and cook for 10-15 minutes at 190-200°C, or until golden.
