Refreshing Mango Salsa
Refreshing, crunchy and slightly spicy, this colourful mango salsa is the perfect addiction to a Mexican inspired night or to be simply enjoyed as a snack with tortilla chips.

- 2 Mangos ripe
- 1 Red onion
- 2 Chili peppers see notes
- 2 Spring onion
- 2 teaspoon Mint fresh, finely chopped
- 2 teaspoon Parsley fresh, finely chopped
- 1 Lime juice
- 1 tablespoon Extra Virgin Olive Oil
- Salt pinch
Chop into small dices the mango pulp, the red onion and the chili pepper; finely chop the spring onions and the herbs.
Combine well into a bowl or deep dish, season with freshly squeezed lime juice, extra virgin olive oil and pinch of salt.
Serve immediately or keep in the fridge covered for later use.
*Just as a reference we use chillies of around 5,000 SHU, that's where basically we found Jalapeños peppers on the Scoville Heat Unit. You can range from sweet to mild to even very hot, according to your own personal taste.
This refreshing mango salsa can be stored in the fridge up to 4 days.
