Refreshing Vegan Chicken Salad
This vegan chicken salad is packed with flavour and nutrition, it's very refreshing and it only takes minutes to prepare.

...for the dressing...
- ¼ cup Vegan Mayo
- 1 tablespoon Ketchup
- ½ teaspoon Mustard
Prepare the salad base by shredding the seitan into bite size pieces, chop the lettuce and roughly break the walnuts.
In a small bowl, combine the 3 ingredients of the dressing and stir until well mixed.
Place salad leaves, vegan chicken pieces, capers and walnuts in a serving bowl.
Pour over the dressing and sprinkle some freshly grated black pepper.
Mix it all together and enjoy straight away.
If you want to prep this salad in advance I strongly recommend to keep both the salad elements and the dressing separate ready to be mixed only upon serving.
This will ensure your salad stays crispy and fresh, otherwise it will wilt.
