Summer is the perfect time of the year to enjoy a good and refreshing salad. I absolutely love putting together new combos playing around with flavours and textures.
Among my all time favourites we have definitely this Tuscan Panzanella, great to use up stale bread, and indeed rich Couscous salads.
But I also love featuring pulses in cold salad dishes like this Chickpea and Bean salad or this scrumptious and easy Lentil Salad.
Lastly, let’s not forget this Vietnamese style Noodle Salad, packed with a punch and full on colours!
But the salad I’m sharing with you today has a really special place in my heart. This Chicken Style Salad is hands down THE summer salad I grew up with.
My mum used to make it very often as everyone in the family absolutely loved it!
This is my vegan version of this childhood salad and not only is it easy to make, but it’s also full of nutritious ingredients that will leave you feeling energized and satisfied. So get ready to enjoy a delicious vegan meal that will have you coming back for more!

All dressed with a super tasty 3 ingredients mayo based sauce.

What to use to make this vegan chicken salad
- Pick your meat free alternative. Depending on what’s available to you, you can choose any meatless alternative you like or crave at the moment between: tofu chunks, ready made meat substitutes, TVPs and so on. I like to use my homemade vegan chicken simply shredded.
- Use your favourite nuts to boost protein and omegas. My mum has always put walnuts, but any other nut or nut mix of your choice will work just fine!
- Add more veggies for different textures and nutrients.
How to prepare an easy Chicken free salad
STEP 1 – Prep the ingredients.
Gather all the ingredients and prep them by shredding the seitan into bite size pieces, chop the lettuce and roughly break the walnuts.
STEP 2 – Make the dressing.
Combine the 3-ingredient dressing in a small bowl until well mixed.
STEP 3 – Mix everything together.
Place the salad, vegan chicken and walnuts in a serving bowl. Pour over the dressing and sprinkle some freshly grated black pepper.
Mix it all together and enjoy straight away.
TIPS
If you want to prep this salad in advance I strongly recommend to keep both the salad elements and the dressing separate ready to be mixed only upon serving.
This will ensure your salad stays crispy and fresh, otherwise it will wilt.
Refreshing Vegan Chicken Salad Recipe
Ingredients:
…for the salad…
1 head Romaine Lettuce
½ cup Vegan Chicken Shreds
¼ cup Walnuts
1/2 tbsp Capers (optional)
Salt
Pepper
…for the dressing…
¼ cup Vegan Mayo
1 tbsp Ketchup
1/2 tsp Mustard
Method:
1. Prepare the salad base by shredding the seitan into bite size pieces, chop the lettuce and roughly break the walnuts.
2. In a small bowl, combine the 3 ingredients of the dressing and stir until well mixed.
3. Place salad leaves, vegan chicken pieces, capers and walnuts in a serving bowl.
4. Pour over the dressing and sprinkle some freshly grated black pepper.
5. Mix it all together and enjoy straight away.
