Vegan Sweetheart Cabbage Slaw
Fresh, crunchy, and full of flavour — this easy slaw is the perfect side for BBQs, sandwiches or grainbowls!

- 1 sweetheart cabbage finely sliced
- 1 large carrot grated or julienned
- ½ medium red onion very thinly sliced
- 1 medium apple like Pink Lady, matchsticks or grated
- 4 tablespoon vegan mayo
- 1 teaspoon Dijon mustard
- 1 tablespoon apple cider vinegar or lemon juice
- 0.5 tablespoon maple syrup optional, for balance
- salt to taste
- pepper to taste
- fresh parsley chopped
In a large bowl, combine the cabbage, carrot, red onion, and apple.
In a separate small bowl, whisk together the vegan mayo, mustard, vinegar (or lemon juice), maple syrup, salt, and pepper.
Pour the dressing over the veg and toss until well coated.
Taste and adjust seasoning – more acidity, sweetness, or salt as you like.
Let sit for 10 minutes before serving to allow flavours to mingle. Garnish with herbs if using.
