Vegan Sweetheart Cabbage Slaw

Fresh, crunchy, and full of flavour — this easy slaw is the perfect side for BBQs, sandwiches or grainbowls!

Ingredients

  • 1 sweetheart cabbage finely sliced
  • 1 large carrot grated or julienned
  • ½ medium red onion very thinly sliced
  • 1 medium apple like Pink Lady, matchsticks or grated
  • 4 tablespoon vegan mayo
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar or lemon juice
  • 0.5 tablespoon maple syrup optional, for balance
  • salt to taste
  • pepper to taste
  • fresh parsley chopped

Instructions

  • In a large bowl, combine the cabbage, carrot, red onion, and apple.
  • In a separate small bowl, whisk together the vegan mayo, mustard, vinegar (or lemon juice), maple syrup, salt, and pepper.
  • Pour the dressing over the veg and toss until well coated.
  • Taste and adjust seasoning – more acidity, sweetness, or salt as you like.
  • Let sit for 10 minutes before serving to allow flavours to mingle. Garnish with herbs if using.
