How to Make Vegan Sweetheart Cabbage Slaw

Step 1: Prep the Veggies

In a large mixing bowl, combine the finely sliced cabbage, thinly sliced red onion, and carrot and apple chopped into matchsticks.

Step 2: Make the Dressing

In a smaller bowl, whisk together the vegan mayonnaise, Dijon mustard, apple cider vinegar or lemon juice, maple syrup (if using), and a pinch of salt and pepper.

Step 3: Combine

Pour the dressing over the vegetables and toss everything together until well coated.

Taste and tweak the seasoning as needed—add more vinegar for tang, syrup for sweetness, or a pinch more salt.

Ingredients

  • 1 sweetheart cabbage finely sliced
  • 1 large carrot grated or julienned
  • ½ medium red onion very thinly sliced
  • 1 medium apple like Pink Lady, matchsticks or grated
  • 4 tablespoon vegan mayo
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar or lemon juice
  • 0.5 tablespoon maple syrup optional, for balance
  • salt to taste
  • pepper to taste
  • fresh parsley chopped
