Spicy Cauliflower Tacos

Spice up your Taco Tuesday with these delicious breaded spicy cauliflower tacos: a definite crowd pleaser!
There’s no need to go to your local taqueria to enjoy sublime tacos.
Ever since I made cauliflower wings, I became OBSESSED with all-things-cauliflower.
And the step to use them as a taco filling was really short.
Allow me to introduce you these generously seasoned & air fried to golden perfection breaded cauliflower tacos. With the right hint of spices and heat (totally adaptable to anyone’s palate), and the humblest of seasonings they are definitely a winner!
What we will need…
Taco Shells or Mini Tortillas
Cauliflower, small.
Plant Milk. Any unsweetened vegan milk of your choice. I used soy.
Flour. All purpose, self raising or gf option.
Spices: fajita seasoning, smoked paprika, cayenne pepper, salt & pepper.
Baking Soda. Omit if using self raising flour.
Panko Bread. To coat the cauliflower bites. Use ground corn flakes for gluten free version.
Toppings. Any toppings of your choice. I’ll put down a list for you to seek inspiration from. I used: guacamole, shredded romaine lettuce, red onion, sweetcorn, coriander, fresh chilli and lime juice.
Taco Toppings
I love adding lots of toppings to my tacos! Here are a few ideas:
Pickled or raw Red Onions
Shredded Cabbage or Lettuce
Avocado or Guacamole
Salsa (pico de gallo, mango salsa, etc..)
Coriander (aka cilantro)
Vegan Cheese
Chilli Peppers
Lime or Lemon Juice/Wedges
Sweetcorn
How to make Cauliflower Tacos
STEP 1 – Prepare the Breaded Cauliflower Bites
Cut the cauliflower into small bite size florets.
In a medium sized bowl, prepare the batter by mixing together flour, spices & seasonings, baking soda and plant-based milk.
Prepare another bowl with panko breadcrumbs.
Coat cauliflower florets first in the batter, then in breadcrumbs and arrange on the air fryer basket forming one layer.
Spray the breaded cauliflower bites with some vegetable oil and air fry for 15 minutes at 200° C (390°F), shaking the basket half way through.
STEP 2 – Prepare the Toppings
Slice fresh onions, chili and lime.
Shred the lettuce or finely slice the cabbage.
Prepare the guacamole or simply mash a couple of ripe avocados with lime juice, salt and pepper.
Drain the sweetcorn and wash the coriander.
STEP 3 – Assemble the Tacos
Warm the tortillas or taco shells according to package instructions.
Spread a tablespoon of guacamole or mashed avocado on the bottom of the tortilla followed by shredded lettuce or cabbage and some cauliflower bites. Top with fresh onion, sweetcorn, sliced chilli, fresh coriander and finish with a squeeze of lime juice….and enjoy!

10 Taco Shells or Mini Tortillas
1 Cauliflower (small)

150 g Plant Milk
100 g Flour
1 tbsp Fajita Seasoning
1/2 tbsp Smoked Paprika
1/2 tsp Baking Soda
1/4 tsp Cayenne Pepper
Salt

60 g Panko Bread
…to top…
Guacamole
Romaine Lettuce
Red Onions
Chili Pepper
Sweetcorn
Cilantro
Lime
Method:
