Tofu is my obsession, 100% the ingredient I like the most using in vegan recipes/preparation for its versatility and texture. This is what made me writing down a round-up with my best 40 vegan recipes with tofu as star of the show. Enjoy!

One of the best ways to start your day with a protein boost is definitely prepping a bowl of tofu scramble. This recipe features both firm and silken tofu to achieving the perfect texture and feel, but you can also only use firm tofu and a splash of plant milk if you like!

Did you know that miso soup is daily served as breakfast in Japan? I sometimes have it myself, especially during cold days, and it is a true treat! Breakfast or not, it's one of my favourite preparations with silken tofu, so I HAD to include it in this round-up!

Ok, not technically a pasta dish, but I still thought of including this in this section to give my gluten-free readers a great alternative to it! In Italy you'd find this into "primi" (first courses), and it is a delightful rice based dish that carry the beautiful flavours of the sea paired with the earthiness of black rice (aka venus rice). Easy to whip up, crowd pleaser.

Smoked Tofu and Pistachio Lasagnoni Rolls

 

Grab some smoked tofu, pistachios and purple carrots if you're feeling posh (orange or any other colour work perfectly fine) and make yourself a batch of these baked lasagnoni in a silky smooth plant-based bechamelle sauce!

Meat/Fish Free

Vegan Tofu Roulade

Let's start big on this section with this delicious tofu roulade. It looks scaringly difficult, but I promise it's not once you follow my easy steps. A great centrepiece for your Holiday table that caters all sorts of vegans. Soya free? Use chickpea tofu instead! Gluten free? Use gf breadcrumbs and vegan ham!

Tofu and Samphire Parcels

These parcels remind me a lot of a fish dish that I used to have all the time in Italy. Instead, in this case no fish are harmed and tofu carries a great sea flavour, thanks also to the salty and fishy samphire. Super simple to whip up for a last minute meal!

Pan Fried Tofu "Salmon"

Another fish dish starring a humble block of tofu is this amazing vegan salmon cleverly marinated and simply pan fried, served with a gorgeous caper & parsley salsa verde.

Easy Tofu Parmesan

American dish inspired from Italian tradition. It pairs perfectly with tofu and can be served on its own or on top of pasta for an heartier and complete meal.
