Gluten Free Vegan Gammon

A completely gluten free alternative to bring on the table, this vegan gammon comes together in very little time and it's packed with flavour.

I'm so pleased to share with you today this meat free alternative that can also be enjoyed by those who are intolerant or simply avoiding gluten.
Because the holidays should bring everyone together, and often vegan and GF people are left aside as wheat packed products are amongst the first ones that vegans opt for.
As you might already recall I have developed over the years a bunch of gluten free friendly alternatives, that have nothing short of the real thing, like this pea protein based turkey(less) loaf and this vegan pepperoni.
Well this one is as simple to make and it is the perfect alternative if you're fancy something more like a ham for main.
This Gluten Free Vegan Gammon Roast is:

- easy to make
- packed with proteins

Gluten Free Vegan Gammon Recipe
Ingredients:
450 g Tofu (vacuum sealed)
50 g Potato Starch
35 g Psyllium Husk Powder
30 g Barbecue Sauce
15 g Nutritional Yeast
1-2 tablespoon Water (to bind the dough)
1 tablespoon Tamari (or GF soy sauce)
1 Vegan Chicken Flavoured Stock Cube
½ tablespoon Beetroot Powder
1 teaspoon Onion Powder
½ teaspoon Garlic Powder
½ teaspoon Salt
¼ teaspoon Black Pepper
Method:
1. Crumble the tofu and place it in a food processor bowl. Process until it breaks evenly.
2. Add the remaining ingredients minus the water and process again until all seems to be well combined.
3. Starting with ½ tablespoon, add as much water as required for the mixture to come together into a workable dough (I cannot give you the exact measurements as it depends on the tofu humidity).
4. Transfer onto a parchment paper sheet and shape the dough into a loaf, then wrap it by securing the ends by twisting them a few times. Do not wrap it extremely tight as the dough will expand slightly whilst cooking.
5. Steam the dough for 45 minutes to 1 hour. I use the pressure cook mode on the Instant Pot for 30 minutes + slow release.

6. You can serve the gammon straight away, coat it in herbs and spices and bake it in the oven or glaze it and broil it. I made a simple glaze with 1 tablespoon tomato puré, 2 tablespoon oil, 1 tablespoon water and 1 tablespoon demerara sugar, brushed it on the diamond scored top and finished with a bunch of cloves. All baked in the air fryer for 15 minutes.

First of all, I wanted to thank you incredibly much for sharing such wonderful recipes that never fail to come out lovely!
My sister has dealt with many health issues and food intolerances for a while, yet a vegan, gluten-free lifestyle has changed her life for the better ( your recipes have, without a doubt, helped me too!)
Having said that, I had to search for a way to make a gluten-free ham in place of my seitan roasts for Christmas and bumped into your blog once again!
I looked forward to making this recipe for Christmas but I, unfortunately, was only able to find medium-firm tofu where we live... Would it be possible to use these kinds of tofu and tweak some of the ingredients to achieve a similar texture? Also! I happen to have methylcellulose on hand and wondered if I could incorporate that into the recipe.
