This vegetarian stew is rich, really tasty, packed full of veggies and quite easy to put together. I’ll guide you step-by-step for the Instant Pot version, but I’ll also include the instructions to make it on the stovetop.
It is such a perfect main if you like to celebrate St Patrick’s day o simply such a comfort food to enjoy on cold rainy days.
What you will need:
Soy Steaks (aka textured vegetable protein slices). I talk about this ingredients in this recipe. You can buy them online, in health food shops or maybe even in a local Asian food shop if you have a good one near by.
Substitute with soy chunks, shredded seitan or any meat replacement of your choice.
Guinness. It wouldn’t be an authentic Guinness stew without the main ingredient: Guinness beer. Thankfully they recently changed their filtering method (no longer through isinglass), and since April 2016, this stout is suitable for vegans. Feel free to get it in a can or bottled.
Vegetables: Potatoes, Carrots, Onions Celery and Mushrooms. These work as the base vegetable for me, however you can personalize this Irish stew and use any vegetables you might fancy.
Vegan Beef Stock. Since the meat version calls for beef, I’d recommend you to use the meat free beef flavoured cube alternative for the broth. Here in the UK it is now largely available in pretty much any supermarket. If you can’t find it or simply don’t feel comfortable of using it, you can substitute it for regular vegetable stock cubes.
Flour. All purpose, to thicken up the gravy. Substitute for cornflour for a gluten free version (mix it with 2 tbsp of COLD water to dissolve the starch, then add to the stew after pouring in the water).
Vegan Guinness Stew Recipe
Ingredients:
2 tbsp Extra Virgin Olive Oil
100 g Soy Steaks (broken into bites)
300 g Potatoes (cut into chunks)
2-3 Garlic Cloves (minced)
2 Onions (roughly chopped)
150 g Mushrooms (sliced thick)
2 Carrots (cut into chunks)
2 Celery Stalks (Roughly chopped)
2 tbsp all-purpose flour (30g)
300 Guinness Beer
2 tbsp Tomato Paste
400 ml Water
1 Vegan Beef Stock Cube
3 Thyme Sprigs
1 tsp Sea Salt (to taste)
½ tsp Black Pepper (to taste)
Method:
1. Heat oil in the instant pot on sauté mode. Add soy chunks and brown the pieces well on all sides.
2. Add onions and cook for 3-4 minutes. If needed add a splash of water.
3. Add carrots, celery, mushrooms and garlic and heat for another 3-5 minutes.
4. Add vegan beef stock cube and flour, mix in well. Allow the mixture to cook for 2-3 minutes to get the raw taste out of the flour.
5. Pour Guinness over the piping hot vegetables to deglaze the pan and get all the bits off the pan into the sauce. Allow for it to evaporate for a couple of minutes, then add the potatoes and thyme.
6. Add tomato paste and water and. Mix well.
7. Put the lid onto the instant pot and pressure cook for 20 minutes.
8. Release the pressure valve and wait a few minutes before opening.
9. Adjust seasonings to taste with sea salt and pepper. Remove thyme and serve.
