One of the most beloved tastes of the autumn is pumpkin spice that's perfect for a warming drink as this Vegan Pumpkin Spice Latte or to be featured in some soft & moist, vegan pumpkin spice muffins!

These dairy-free, egg-free muffins are perfect for anyone who follows a plant-based diet, but they’re so delicious that everyone will love them. Rich in Nutrients: Pumpkins are high in fibre and loaded with vitamins like vitamin A and C. Using real pumpkin purée gives these muffins a moist texture and nutritional boost.

Super Easy to Make: This recipe is simple, using basic pantry ingredients, and doesn’t require any complicated steps. It’s ideal for both seasoned bakers and those new to vegan baking.

Versatile: Vegan pumpkin spice muffins can be enjoyed as a breakfast treat, a snack, or even a light dessert. Plus, they can easily be customised with mix-ins like nuts or chocolate chips for added texture and flavour.

🔪 How to Make Dairy Free Pumpkin Spice Muffins

The method to make the batter for these fluffy pumpkin spice muffins is very similar to the one used for this Italian-Style Vegan Carrot Cake, so, for the purposes of visual steps I am going to attach the same picture of that recipe.

STEP 1 - Steam the Pumpkin

Get your steam gear ready or simply place a colander over a pan with boiling water. Add previously chopped pumpkin, cover with a lid and steam until fork tender (10-15 minutes).

STEP 2 - Preheat and Prepare

Preheat your oven to 350°F (180°C). Line muffin paper cases in a 12 holed muffin tray (or you can bake 2 batches of 6).

STEP 3 - Combine Dry Ingredients

In a bowl, whisk together the flour, sugar, vanilla sugar, pumpkin spice mix, baking soda and baking powder. Set aside.

STEP 4 - Blend Wet Ingredients

In a blender, combine the steamed pumpkin pulp, plant milk, apple cider vinegar and vegetable oil. Blend until smooth.

STEP 5 - Combine

Pour the blended mixture into the bowl of dry ingredients. Mix gently with a spatula until well combined. Avoid overmixing to keep the muffins light and fluffy.

STEP 6 - Bake

Pour the batter into the prepared muffin cases and top with some sugar/chocolate sprinkles. Bake for about 20 minutes or until a toothpick inserted into the centre comes out clean.

STEP 7 - Cool down and enjoy!

Let the muffin cool in the pan for about 5-10 minutes before transferring it to a wire rack to cool completely. They are now ready to enjoy!

They also freeze well. To freeze, let the muffins cool completely, then store them in a freezer-safe bag or container for up to 3 months. When you're ready to eat them, thaw them overnight in the fridge or microwave them for a quick treat.

Vegan Pumpkin Spice Muffins

Ingredients

  • 250 g All Purpose Flour
  • 125 g Sugar
  • 3 g Pumpkin Spice Mix
  • 5 g Vanilla Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • 1 pinch Salt
  • 150 g Pumpkin Puree cooked, see step 1
  • 100 g Plant Milk
  • 1 tablespoon Apple Cider Vinegar
  • 80 g Vegetable Oil
