The Parisian Pizza is a classic of Neapolitan cuisine which is basically a “hybrid” between the calzone (made with pizza dough) and rustic pizza (made of puff pastry). A gorgeous secret of Italian food that you can find in quality delicatessens around Naples, this makes the perfect lunch.
The beautiful crispy flaky texture of the pastry with the thin dough of the pizza base create a gorgeous sandwich for the fillings. This two dough combo gives this easy-to-make rustic pizza a unique and an extremely delicious flavor!
Traditionally, Parigina Pizza is stuffed with tomatoes, provolone and raw ham.
Nowadays we are blessed with so many good quality and easily accessible vegan alternatives to these traditional ingredients, that I wanted to keep it “traditional”, just without the cruelty!
The result is exactly what you’d expect: a firm, crunchy base that packs a juicy punch of sweet tangy tomatoes, a stringy filling of melted cheese, savory ham and a crumbly layer of mouthwatering puff pastry.

Vegan Parigina Pizza Pie Recipe
Ingredients:
1 roll of Pizza Dough
1 roll of Puff Pastry
6-8 slices Vegan Ham
6-8 slices Slices of Violife cheese
300 g well-drained diced tomato pulp (or crushed peeled, or pureed)
1 tsp Dried Parsley (optional)
Extra Virgin Olive Oil
Vegan Milk (for brushing)
Salt
Pepper
Method:
1. Preheat the oven to 200 ° C (390 ° F).
2. On a 20×30 pan, roll out the pizza dough (you can also make it at home if you have time) and prick it with a fork. I recommend that you leave it on the baking paper provided, otherwise remember to grease the baking sheet well before placing the dough.
3. Spread a generous layer of tomato pulp. Try to drain as much excess liquid as possible leaving yourself with as much pure pulp as you can. This will help massively in aiding the crispness of the cook
4. Season with salt, pepper, oil and parsley (if you are using it).
5. Cover with an even layer of vegan ham.
6. Evenly distribute the slices of stringy vegan cheese on the layer of ham.
7. Cover with the puff pastry roll, seal the edges well (remove excess dough if necessary), then prick with a fork and brush with vegan milk.
8. Place in the refrigerator to cool for about 15 minutes. It is always important to cool the puff pastry before it goes into the oven for a perfect result.
9. Place the vegan parigina pizza on the base of the preheated oven and bake for 10-15 minutes. Then place on the shelf to center and continue cooking for another 20-25 minutes.
10. Remove the parigina and leave to cool for at least 10 minutes before portioning and serving.
