Hey there, fellow plant-based cooking enthusiasts! Today, I'm excited to dive into the wonderful world of homemade applesauce and its magical role as the ultimate egg substitute in vegan baking. Whether you're new to vegan baking or a seasoned pro, using applesauce in your recipes can elevate your creations to a whole new level of deliciousness. So, grab your apron and let's get baking!

The Magic of Applesauce in Vegan Baking

Let's start by discussing why applesauce is such a game-changer in vegan baking. As we all know, eggs play a crucial role in traditional baking, providing structure, moisture, and binding properties to baked goods. But for those of us following a plant-based diet, finding the perfect egg substitute can be a bit challenging. That's where homemade applesauce comes in!

To make this magic applesauce recipe you'll only need 4 ingredients:

  • Apples: Four apples will make about four servings of applesauce.
  • Water: just enough extra moisture to cook out the apples.
  • Sugar: white sugar to caramelize and sweetens things up.
  • Lemon Juice: for a touch of acidity and whitening (avoids apples to go dark)

The Role of Applesauce in Vegan Baking

When it comes to vegan baking, applesauce is a true superhero ingredient. Not only does it provide the moisture and binding properties that eggs do, but it also adds a hint of natural sweetness and flavour to your baked goods. Plus, it's incredibly easy to make at home and can be customized to suit your taste preferences.

Using Applesauce as an Egg Substitute

Now, let's talk about how you can use applesauce as a substitute for eggs in your favourite vegan baking recipes. The general rule of thumb is to use around 60 grams (=¼ cup) of applesauce for every egg called for in the recipe, which is basically how a medium egg weights like.
However, it's important to keep in mind that this may vary depending on the specific recipe and the desired texture of your baked goods.

Benefits of Using Applesauce

One of the biggest benefits of using homemade applesauce as an egg substitute is its nutritional value. Unlike eggs, which are high in cholesterol and saturated fat, applesauce is low in calories and fat, making it a healthier option for those looking to reduce their intake of animal products. Plus, applesauce is packed with fiber, vitamins, and antioxidants, making it a nutritious addition to your vegan baking repertoire.

Recipes and Tips for Success

1. Best Apples for Applesauce

The best apples for applesauce are whatever apples you have on hand and need to use up. However, if you have a choice, we recommend using a combination of sweet and tangy varieties for the best flavour. Popular sweet varieties include Honeycrisp, Pink Lady and Fuji, while popular tangy varieties include Granny Smith and Braeburn.

2. Tried and Tested Recipes with Applesauce

Now that we've covered the basics, let's dive into some delicious vegan baking recipes that feature applesauce as the star ingredient.

From moist and fluffy muffins to decadent cakes and cookies, the possibilities are endless when it comes to baking with applesauce.

Here are a couple of my shared recipes that feature it:

  • Vegan Black Forrest Gateau: Indulgent and decadent, this vegan black forest cake is a must-try plant based goodness!
  • Brioche Swirl Cake (aka Babka): This twist on the famous Jewish sweet braided bread is soft and buttery and full of flavour.

Conclusion

In conclusion, homemade applesauce is a game-changer in vegan baking. Not only does it provide the moisture and binding properties that eggs do, but it also adds a hint of natural sweetness and flavour to your baked goods. Plus, it's incredibly easy to make at home and can be customized to suit your taste preferences. So, the next time you're whipping up a batch of vegan treats, don't forget to reach for the applesauce – your taste buds will thank you!
