Vegan Cashew Tzatziki Sauce

OMG I'm literally addicted to this vegan cashew tzatziki sauce! It's smooth, creamy with a acidic and refreshing aftertaste.. In two words: Simply Perfect!

vegan greek cucumber sauce in white ceramic plate over a light blue cloth topped with cashews and fresh mint leaves

Perfect to season falafel wraps, as a dipping sauce for your favourite raw veggies or to give more character to your Greek-inspired dishes, like these Mushroom Souvlaki, this vegan tzatziki sauce will conquer your taste buds spoonful after spoonful.

And guess what? It's also very quick and straightforward to make!
...Well, once you've remembered to soak the nuts a little in advance.

Say goodbye to dairy without sacrificing flavour – this vegan twist on a classic Greek favourite is sure to become a staple in your kitchen!

 

How to make this Vegan Tzatziki Sauce

Ingredients:
100 g Cashews Nuts (soaked overnight or at least for 4 hours before blending)

1 Lemon (Zest & Juice)
¼ Cucumber
1 Clove Garlic
10ish Leaves Fresh Mint
Salt & Pepper to Taste

Method:
1.
Soak cashews ideally overnight (or at least for 4 hours).

ingredients for vegan tzatziki sauce2. Grate the cucumber, remove the seeds and drain the excess water with a clean cloth.

3. Add all the ingredients in a blender and blend until smooth and gorgeous!

*Please note: a bit of extra water (of some plant based milk for extra taste) may be required in order to achieve the perfect smoothness.

4. Do not forget to taste it to adjust the saltiness and the amount of pepper and....

5. SERVE!

  • Grate the cucumber, remove the seeds and drain the excess water with a clean cloth.
