Refreshing, crunchy and slightly spicy, this colourful mango salsa is the perfect addiction to a Mexican inspired night or to be simply enjoyed as a snack with tortilla chips.

Summer is almost knocking on our doors, and here in the UK the weather lately has been soooo nice!
 
We had this salsa already 3 times in the last couple of weeks; both me and my husband cannot resist its fresh and spicy deliciousness.
 
Perfect to be enjoyed with lightly salted (vegan) tortilla chips, to top tacos or as a sweet & spicy addition to a falafel wrap. 
 
It's impossible not to fall in love with this recipe and this is why I'm sure you will too.
 
You will also get the wonderful benefits of a meal that is packed with an array of nutrients such as vitamins and minerals, especially potassium and vitamin A.
 
This is our go-to recipe, that includes different elements that bring different textures and flavours that just go so well together:
- (of course) we have sweet mangos as a base
- red onions for both sweet & astringent taste and their crunch
- spring onions or green onions for sweetness and flavour
- chilies for heat and crunch. Here is where it is completely up to you to decide. We like it spicy, but without blowing our heads off. Just as a reference we use chillies of around 5,000 SHU, that's basically where you will find Jalapeños peppers on the Scoville Heat Unit. You can range from sweet to mild to even very hot, according to your own personal taste.
- fresh mint & parsley. This mix works incredibly well in this salsa, and I really, really encourage you to try it. However, if you're not a fan of these herbs you can use coriander instead.
 
All is seasoned with:
- freshly squeezed lime juice
- extra virgin olive oil

How to make this Refreshing Mango Salsa

Ingredients:
2 Mangos (ripe)
1 Red onion
2 Chili peppers (see notes)
2 Spring onion
2 teaspoon Mint (fresh, finely chopped)
2 teaspoon Parsley (fresh, finely chopped)
1 Lime (juice)
1 tablespoon Extra Virgin Olive Oil
Salt (pinch)

Method:
1. Chop into small dices the mango pulp, the red onion and the chili pepper; finely chop the spring onions and the herbs.
2. Combine well into a bowl or deep dish, season with freshly squeezed lime juice, extra virgin olive oil and pinch of salt.
3. Serve immediately or keep in the fridge covered for later use.

This refreshing mango salsa can be stored in the fridge up to 4 days.
