The Quickest Vegan Tzatziki Sauce

Perfect for a last minute meal, this vegan tzatziki sauce is definitely the easiest and quickest version you could possibly make!

I just love Greek food and the refreshing tzatziki sauce is a thing that I would personally die for!

Lil dramatic? Maybe, but it helps me making a point!

Although I've already shared on this blog a vegan version of tzatziki sauce made out of cashews, the one I'm going to show you today is the easiest and quickest version you could possibly make!

It is perfect for a last minute meal where you need that refreshing sauce to bring everything together.

Be prepared to have your mind absolutely blown!

How to make The Quickest Vegan Tzatziki Sauce

I bet you all already have all the ingredients for this speedy tzatziki sauce at home.

What you'll need is simply:

  • Vegetable Oil - sunflower, rapeseed, corn work all perfectly fine. Please refrain to use olive oil as it is pretty flavourful and it will overpower the sauce.
  • Soy Milk - mandatory. No other plant milks will do the trick I'm afraid, as we are going to rely on a little agent called lecithin, naturally contained in soy, to act as an emulsifier and magically turn the sauce from liquid and separated to creamy and silky smooth.
  • Cucumber - I like to use British cucumber but any variety of cucumbers will be perfect.
  • Fresh Mint - essential for the irresistible and authentic taste 
  • Garlic - fresh or powdered. I do recommend to use fresh garlic though, for a deeper, gorgeous flavour
  • Lemon Juice - for that zingy taste

The Quickest Vegan Tzatziki Sauce

STEP ONE

Grate the cucumber. 

STEP TWO

Squeeze out the moisture & set aside for a moment.

STEP THREE

Blend all the ingredients together.

STEP FOUR

Add grated cucumber.

STEP FIVE

Enjoy!

The Quickest Vegan Tzatziki Sauce

Ingredients:
100 ml Vegetable Oil

70 ml Soy Milk
½ British Cucumber
6-8 Mint Leaves (Fresh)
1 Garlic Clove
½ Lemon (Juice)
Salt
Pepper

Method:
1. Wash the cucumber and grate it.
2. Place one sheet of cheese cloth over a sieve and pour the grated cucumber. 
3. Squeeze all the moisture off the cucumber and set aside.
4. In a tall blender glass measure all the remaining ingredients and blend for a few seconds until smooth and creamy.
5. Add the cucumber, stir well and use the vegan tzatziki sauce straight away.

This sauce will last in the fridge for a few days (up to one week).

Ingredients

Instructions

  • Wash the cucumber and grate it.

This sauce will last in the fridge for a few days (up to one week).
