How to make The Quickest Vegan Tzatziki Sauce
I bet you all already have all the ingredients for this speedy tzatziki sauce at home.
What you’ll need is simply:
- Vegetable Oil – sunflower, rapeseed, corn work all perfectly fine. Please refrain to use olive oil as it is pretty flavourful and it will overpower the sauce.
- Soy Milk – mandatory. No other plant milks will do the trick I’m afraid, as we are going to rely on a little agent called lecithin, naturally contained in soy, to act as an emulsifier and magically turn the sauce from liquid and separated to creamy and silky smooth.
- Cucumber – I like to use British cucumber but any variety of cucumbers will be perfect.
- Fresh Mint – essential for the irresistible and authentic taste
- Garlic – fresh or powdered. I do recommend to use fresh garlic though, for a deeper, gorgeous flavour
- Lemon Juice – for that zingy taste
STEP ONE
Grate the cucumber.
STEP TWO
Squeeze out the moisture & set aside for a moment.
STEP THREE
Blend all the ingredients together.
STEP FOUR
Add grated cucumber.
STEP FIVE
Enjoy!
